After last week's guest post by Chef Aj on her single most important kitchen appliance, her pressure cooker, and the unbelievable warm response and conversation about the topic, I just had to break out my pressure cooker over the weekend. I also spent some well needed time reading up on just how pressure cooking works.
That and cooking up two pressure cooked recipes. The first, a Cauliflower-Potato Curry from Lorna Sass's book Great Vegetarian Cooking Under Pressure (here's the recipe and here's a similar recipe with no fat) and the second, Chef Aj's 8 Minute Split Pea Soup. Both dishes were OUTSTANDING (yes, I am yelling, they were that good) and we have been enjoying them for lunch and dinner all week.
I'm officially a convert.
That means I need recipes. Lots of recipes.
